Japanese schools are famous for providing children with daily lunch – known as ‘kyushokku’. Education authorities ensure all children are fed a varied and healthy diet on a daily basis. Popular dishes include natto (fermented soy-beans, an acquired taste), miso soup, Japanese curry and on special occasions – whale meat!

1880 to 1910 in the United States saw a “Golden Age of Cheese.” Immigrants traveling to the country brought traditional recipes from their homelands, merging with the powerful mass production model of the US. This drove cheddar production, still dominant today.

While most foods are harvested during the autumn, foods particularly associated with the season include pumpkins (which are important foods of both Thanksgiving and Halloween) and apples, which are used to make many wonderful beverages.
